Hummus

This is the quickest and best-tasting hummus recipe I’ve found. I have found hummus to be versatile and find that people have different taste preferences. This one is our favorite.

1 cup chickpeas, drained and rinsed

2 cloves garlic, fresh, chopped

1 Tbsp sesame seeds

2 Tbsp orange juice

1/4 tsp salt

1/8 tsp fresh ground black pepper

1/8 tsp cumin

2 Tbsp olive oil

1 Tbsp fresh parsley, chopped

Combine all ingredients in a blender or mini food processor and puree until smooth.

Hummus is great as a dip with fresh veggies or pita chips, or as a spread for sandwiches, wraps, etc.


Healthier Butter

I use this butter for spreading on breads. It’s always soft enough to spread, even when I just pull it out of the fridge. It’s healthier than plain butter. You might want to condition your family to this, as the taste is slightly different. Start with a little less olive oil and work your way up.

One part olive oil

One part butter

Mix well until smooth and fully blended. Store in the fridge.


Honey Butter

This is a spread that just makes it simpler to put honey and butter on your toast or cornbread. Just mix one part butter and one part honey. I usually do 1/2 cup of each. It lasts longer when I make one cup of it. Stir it well until it’s smooth. Voila!
