Yogurt Onion Sauce

1 small red onion, finely diced (you can use regular onion, if you’re in a pinch)

3/4 tsp salt, divided

1 Tbsp lime juice

1 cup plain yogurt

2 cloves garlic, minced

Place onion in a bowl and sprinkle with 1/4 tsp salt. Mix well with your fingers and let it rest while you prep the rest of the sauce. In a small bowl, stir remaining sauce ingredients together, including the rest of the salt. When the onion is translucent and watery, rinse it well in a colander and add to the yogurt mixture. Stir well and set it aside until you’re ready to serve.

Hummus

This is the quickest and best-tasting hummus recipe I’ve found. I have found hummus to be versatile and find that people have different taste preferences. This one is our favorite.

1 cup chickpeas, drained and rinsed

2 cloves garlic, fresh, chopped

1 Tbsp sesame seeds

2 Tbsp orange juice

1/4 tsp salt

1/8 tsp fresh ground black pepper

1/8 tsp cumin

2 Tbsp olive oil

1 Tbsp fresh parsley, chopped

Combine all ingredients in a blender or mini food processor and puree until smooth.

Hummus is great as a dip with fresh veggies or pita chips, or as a spread for sandwiches, wraps, etc.


Sweet Dressing

There are two variations for this dressing. The one without mayonnaise is, naturally, healthier.

1.

1/4 cup mayonnaise

1/4 cup plain yogurt

1-1/2 tsp honey

1-1/2 tsp lemon juice

Blend thoroughly with a wire whisk.

2.

1/4 cup plain yogurt

2 tsp honey

2 tsp lemon juice

1/8 tsp salt

Blend thoroughly with a wire whisk.


Tzatziki

500g Mediterranean yogurt (or regular plain yogurt, strained in cheesecloth over a strainer for a few hours to thicken)

5 Tbsp sour cream

5 cloves of garlic, crushed

1/2 tsp salt

pinch of pepper

pinch of mint

1/2 tsp garlic powder

a drop of lemon or lemon rind

1 Tbsp olive oil

1/2 a cucumber, peeled, and grated, then squeezed well in a dish towel

Mix it all together and enjoy! You can vary it according to your tastes.

Serve with pita chips! Yum!


Creamy Caesar Dressing

1/2 cup mayonnaise

1/4 cup milk

1/4 cup Parmesan cheese (optional)

2 Tbsp lemon juice

1 tsp Dijon mustard (Some people might like more. Depends on your tastes.)

1 clove garlic, minced

1/4 tsp pepper

Mix all ingredients until smooth. Refrigerate until ready to serve. (You can substitute half of the mayo for plain yogurt.)
