This is a great meal for hot summer days, or for days when you’re busy and want to throw something together. I sometimes do the prep work on a Saturday afternoon and save it for our Sunday lunch meal so I don’t have to spend any time working in the kitchen before we eat!
lettuce, torn into bite-size pieces
tomatoes, diced (optional)
canned or cooked black beans
shredded cheese of your choice
green onions, sliced
Make the Yogurt Onion Sauce first. Place 2 tostada shells on each plate. Place lettuce on each shell and top with tomatoes and black beans. Sprinkle with cheese and green onions and top each with a dollop of salsa and Yogurt Onion Sauce.
