Basic Granola

1/2 cup honey

1/2 cup oil

2 tsp vanilla

1 tsp cinnamon

8 cups regular rolled oats

Warm honey and whisk it together with oil, vanilla, and cinnamon. Pour liquid mixture over oats in a big bowl. Stir together thoroughly. Spread evenly in baking pans or on cookie sheets. You could also use a big roasting pan, but you have to watch it more carefully. Bake at 300*F for 20-30 minutes, stirring well every 10 minutes.

Variations:

– Cook in a crockpot instead. Keep the lid cracked open a bit, and cook on low for 5 hours. You have to watch it closely during the last hour or so. Stir occasionally.

– Add 1/2 cup of wheat germ or bran, coconut, ground flax seed, etc.

– Add dried fruit after cooking.

This recipe is very versatile! Have fun with it! I always double it when I make it and it fills a 4L container.
